Camp Kau Kau

This summer we hosted our third installment of Camp Kau Kau! A culinary focused summer academy that highlights fresh produce and the local flavors of the islands. We had guest chef visits and a little excursion into our local Kamuela KTA and to The Kona Village a Rosewood Resort.

Our group of students came from all over the Kohala moku and each of them have their own connection to food and cooking. Some of our students cook at home and others have family members who are culinary professionals, so their passion is very present.

The focus in the beginning of the program was to teach some basic culinary skills and highlight different cooking techniques such as steam, pressure cook, pan-fry etc. The recipes highlighting these cooking techniques also highlighted the flavors and cultures brought to the islands by various immigrant groups. Our visit to KTA was very informative and gave all of us a good look into the moving parts of our small local island grocery stores. There was also some exploration in different preservation techniques.

In the middle of our second week, we had the honor of taking our students to The Kona Village A Rosewood Resort. Our students got a chance to visit the resorts mala which is run by a Waimea Middle School Alumni. They also had the opportunity to make a delicous steamed fish and ‘uala meal, which we ate at lunch. The resort grounds are also home to well preserved petroglyphs, especially regarding navigation so there was also some amazing knowledge shared.
