French Onion Soup

Ingredients

  • 2 Tbsp. butter or margerine

  • 1 Tbsp. olive oil

  • 6 large onions, thinly sliced

  • 1 Tbsp. all-purpose flour

  • 3 cans (14oz each) beef broth or vegetable broth

  • 1 c. water

  • salt and pepper to taste

  • 1 c. shredded swiss or gruyere cheese

  • 1/4 c. grated parmesan cheese

Directions-Makes 6 Servings

  1. Heat butter and olive oil in a 4-quart pan over medium-low heat, add onions, and cook, stirring constantly, until soft and caramel-colored, but not browned (30-40minutes)

  2. Stir in flour and cook for about 2-minutes to brown lightly.

  3. Pour about 1 cup broth, stirring to blend flour and broth. Add remaining broth and water.

  4. Bring to boil; cover, reduce heat, and simmer for 30 minutes. Season to taste with salt and pepper.

  5. Ladle hot soup into six 1-2-cup overproof soup bowls/dishes. Float a piece of crispy French bread on top and sprinkle with Swiss/Gruyere and Parmesan cheeses.

  6. Place bowls in a 425 degree oven for about 10 minutes; then broil about 4 inches from heat until the cheese is lightly browned.
