Luscious Lemon Possets

Yield: ~6-8 servings-lemon halves

Ingredients:

  • 2 cups- Heavy Cream

  • ⅔ cups granulated sugar

  • 5 Tbsp lemon juice

  • 1Tbsp lemon zest

  • 4-5 heads of lavendar

Instructions:

  1. Cut lemons in half, long way and scoop out flesh and juice. Placing the empty halves on a parchment lined sheet. Zest one-to-two extra lemons. Set zest, juice and halves aside. 

  2. In a small saucepan combine heavy cream and sugar. On medium heat bring to a boil, stirring gradually to dissolve sugar and prevent burning. Once boiling, reduce heat and simmer for 5-7mins. Do not over cook/burn the cream. 

  3. Turn off heat and toss in lavender heads. Let steep for 2-3 mins. Remove lavender heads and gently stir in lemon juice and lemon zest. 

  4. Pour the warm custard filling into your empty lemon halves, transfer to a refrigerator and let set for 3 hrs but best over night! 

Fun Toppings: You can garnish your gorgeous possets with mint, fresh slice of lemon, zest or even a little burnt sugar like a Creme Brulee!
