Māla‘ai Homemade Veggie Tomato Sauce

Yield: ~8-10 Servings Worth

Ingredients:

1 Large Carrot-roughly chopped

1 Large Onion- roughly chopped

4 Cloves of Garlic- peeled

3-6 Leaves of Dark Greens- (Swiss Chard, Kale, Collard)-roughly chopped and stems removed

2 cans stewed tomatoes 

1 can garbanzo beans-liquid included

1 1/2 tsp salt

½ tsp black pepper

1c. Fresh Basil Leaves

3Tbsp. Olive Oil

Instructions:

  1. In a stock pot, heat olive oil on medium heat, once hot add chopped onions and carrots. Saute for 3-5 mins stirring occasionally to prevent burning. Add in greens and continue to saute until onions, carrots and greens are tender. 

  2. Add in canned tomatoes, garbanzo, garlic and basil. Cook for 10-15 mins or so until all is combined

  3. Using an immersion blender, blend the healthy marinara sauce smooth. Using water, pasta water or a little olive oil to help thin the sauce if it's too chunky. 

  4. Add salt and pepper. Serve over your favorite pasta.


Optional: This recipe can be edited for any ingredients you like. Could sub out greens for mushrooms or bell peppers. Highly adaptable recipe. Make a sauce you’ll eat!
